You can't have copies of an app (to the best of my knowledge). The main attraction with jailbreaking is customization (and piracy, which as an aspiring developer, I don't support). Here is a screenshot of my homescreen.

It's awesome how you can theme the look of your phone. That's my main usage for jailbreaking, but there are many more things you can do or customize.
